April 29, 2000 The ritual "shitsugi" to make matured sake Okinawa Prefecture. I joined the ritual "shitsugi" to make matured spirits "Awamori" in Okinawa. Each family keeps matured sake in the pot in Okinawa, and they drink it in celebration of happy events.

	Tasting sake of the pot. You have to choose pots very carefully to keep sake in good condition avoiding it going flat.
	When the party gets in full swing, people begin to sing "kagiyadehu" to sanshin accompaniment. People usually sing the song and dance at the beginning of the happy events. Mr. Yara inherits the Nomura school of Okinawa dancing. Naturally, they begin singing and dancing. Some compose poems off the cuff and some sing ad-lib songs of the poems.		Ryubu, traditional dance in Okinawa is very popular and people love their own culture. Traditional songs and dance are alive in people's life.
